Citrulline is an alpha amino acid. White crystal or crystalline powder, acid taste, soluble in water, insoluble in ethanol and ether. Citrulline is produced from ornithine and carbamoyl phosphate in urea cycle, or by-product of arginine catalyzed by nitric oxide synthase (NOS). First, arginine is oxidized to n-hydroxy-arginine, which is then oxidized to citrulline and releases nitric oxide.
